THE JOURNEY
Little did I, Hannah, know that moving to London and beginning my butchery apprenticeship would lead to a life focused on sustainability and zero-waste eating. 10 years and 6 continents later, at the age of 29, New Zealand’s working holiday visa was calling. I landed in Auckland at 5am and had a job interview by 1pm. That was ten years ago. A Lady Butcher began with the desire to create truly local charcuterie and share my passion for New Zealand’s pristine meat with the country and those whom visit here.
The Meat
Traditionally cured in New Zealand using grass-fed lamb, New Zealand wagyu, and local free-range pork.
