Farm Gate Produce : Free Range Pork
Hourhora, Northland
Our preferred supplier, their pigs (heritage breed Devon Large Black & Berkshire) are totally free range, farrow outside, and have plenty of natural shelter around the farm for them to live in. Their home also includes a private beach, where these animals enjoy many a summer swim.
Long Acre Farm : Free Range Pork
Onamalutu Valley, Marlborough
Just outside of Blenheim, these sows (heritage breed Saddleback & Large Black) live out their life with Rick Martin and Nairn Illingworth, whom name each one as they are an important part of their farm family. Free range and near a stream, these cheeky animals are sometimes found walking themselves into town!
First Light Foods : NZ Wagyu
Havelock North, Hawke’s Bay
The high marbled, premium 100% grass-fed beef from First Light NZ Wagyu is perfect for curing and produces a rich earthy and nutty flavour in our bresaola. We find their story of sustainability inspiring as well.
Leelands Lamb : Southland Lamb
Waihopai, Invercargill
When Bill & Sue French asked us to cure their Southland lamb it took us only a moment to agree. Grazed on the fertile Southland plains, Leelands Lamb is export quality and kept in New Zealand for New Zealand. Just how we like it.
Hammerhead Foods : Spices
Caversham, Dunedin
Our charcuterie is all about the meat so the spices we use need to highlight the meat’s natural flavours. That’s why we use local spices from Hammerhead foods. They produce a wide array of items but our favourites are their homegrown smoked chilis, dehydrated Central Otago mandarins, & foraged juniper berries.
Pacific Salt : Marlborough Sea Salt
Lake Grassmere, Marlborough
Pacific Natural sea salt is harvested from the clear waters of the great southern oceans. These waters are evaporated using the natural process of sun and wind. Certified Organic by Bio-Gro NZ and free from anti-caking agents and iodine, this salt is perfect for even curing.

Sourcing only the finest quality ingredients from around the village of horopito and local area, Rhayne specialize in harvesting and drying native spices such as the kawakawa & horopito we use in our cures.
